Kulinarium - Eat well and get well

Kulinarium is Aalborg University Hospital’s research and development unit for nutrition, food, and meals, featuring its own specialised development kitchen (Denmark).

We operate at the intersection of research and practice, where food is not regarded merely as a service, but as an active component of treatment.

Our vision

To be a leading national and international research and development kitchen within nutrition, food, and meals for both patients and healthy individuals.

Our mission

To improve nutrition through data-driven and innovative solutions in hospitals, and to contribute to disease prevention through healthier diets in the wider society.

We achieve this by:

  • Conducting experimental trials that enhance nutritional quality
  • Developing new food products and recipes — both for patients with specific needs and for preventive use in the retail sector
  • Applying highly specialised expertise to shape the future of hospital meals

The meal is a multisensory experience. Therefore, our work is founded on a broad research and development portfolio encompassing gastronomy, sustainability, sensory science, ingredient quality, nutritional physiology, dietetics, sociology, psychology, as well as architecture and design. Interdisciplinarity is our key driving force.
